On one a Vanil ‘discoveries’ trip to Stockholm I was taken to Rosendal’s Garden, a short walk from the centre of town across the Djurgårdsbron bridge. The aim of this beautiful garden is to present organic cultivation to the public, the Orchard alone has some hundred apple trees, many planted in the 1860s. We sat here for a while listening to classical music played on the piano by a talented pianist, such a beautiful relaxing space. The garden was on this occasion also showing an ‘Art Colour Installation’ which was just stunning. We ate in The Garden Café which is one of Stockholm’s true gems serving fantastic tasty food, they have the best salads and soups, prepared using organic produce grown onsite; they even have their own bakery making fresh daily breads for sandwiches, as well as buns and pastries. Everything was so beautifully presented, in glass-houses, on rustic wooden tables with white linen cloths; so charming so Swedish!
In our small walled garden the lavender is just coming into bloom with its delightful fragrance when brushing past. One of my lovely customers makes the most amazing lemon, lavender and poppy seed cake, which on a summer day is perfect with an Elderflower Presse, promise to blog the cake recipe soon.
Elderflower Presse Recipe

Its such a pretty flower and tastes lovely with Fizz or drop some into rhubarb with a dollop of creme frais.
25 heads of elderflower , 2 litres water , 3or 4 lemons and 1 -2 oranges – juiced and the zest of these xx you boil the elderflower heads with the zest of all the fruit (after removing all bugs) and then after it has boiled, leave it covered overnight to infuse. Next day – strain through a Muslin or similar and boil again with a kilo of coconut sugar xxx simmer for 6 -10 mins and then funnel into clean bottles with Spring on caps (if that’s what you call them).
